Sundakkai Podi (Turkey Berry)

Sundakkai(Turkey Berry) Podi - Sundakkai has surprising health benefits. It is a rich source of iron. Including it in your diet regularly will prove beneficial to your digestive system, promotes healthy immune system. Ingredients - 1/2 cup dried sundakkai 3 red chilli 2 spoon chana dal 1/2 cup curry leaves 1 spoon coriander seeds 1 spoon cumin seed 5-6 spoon sesame oil 2 inch size jaggery/1 spoonful of powdered jaggery Method - 1. Take a pan dry roast chana dal till it becomes aromatic and changes colour to slight golden. Next dry roast coriander seeds, cumin seeds, red chilli, curry leaves for 5-6mins and transfer it into a plate. 2. Next add 4 spoon of sesame oil, once the oil is hot add the Sundakkai (Turkey berry) and fry it nicely till it becomes dark brown in colour. (It takes about 7-8mins) 3. Coconut Milk Delight - A very healthy vegan drink.  Coconut Milk is a versatile ingredient. Here we are going to use coconut milk instead of regular canned milk. It will increase the richness as well as the nutritional benefit of the drink. Ingredients -  - 1 large Coconut - 1 cup water - 6 dates - 10 almonds - 10 cashew nuts - 10 pistachios - 1 banana - 5 spoon honey - 1/4 cup chia seeds Method - 1. Soak almonds, cashew nuts, pistachios in water for an hour. 2. Grate the whole coconut. 3. Take a mixer jar add the grated coconut, 1/2 cup water and grind it to a smooth paste and extract the first coconut milk from it using a muslin cloth/strainer into a mixing bowl. 4. Again grind the coconut by adding the remaining 1/2 cup water and extract the second coconut milk in the same bowl. 5. Next add honey, chia seeds into the coconut milk and give it a good mix and keep it inside the fridge for one hour. 6. Rabdi - Rabdi is a delicious and one of the most served desert in our home country.It is a heavenly sweet recipe that is served in almost every special occasions. The process of making Rabdi requires a lot of time & attention. Ingredients - - 1 litre full cream milk - 1/4th cup sugar - 6 Almonds - 6 cashews - 6 pistachios - 1/2 teaspoon cardamom powder - few strands of kesar Method - 1. Soak almonds, cashews, pistachios for one hours in hot water and then chop it finely and keep it aside. Also soak the saffron strands by adding 5 spoons of warm milk to it. 2. Take a heavy bottom pan, pour the milk into it and heat it. Do not stir at start allow the cream to form at the top of the milk. 3. Sattu drink -Sattu drink is one of the nutritious, tastiest, gluten-free and refreshing protein rich drink. It acts as natural coolant during summer, aids digestion and good for diabetics. Sattu flour can be prepared easily at home. 1. Buy roasted chana dal (bengal gram from the market) 2. Remove the skin from the roasted chana. 3. Grind it into a fine powder. 4. Sieve and store it in a glass jar and use whenever required. Ingredients - - 2 spoon sattu flour - 1 lemon - 2 glass water - 5-6 Mint leaves - 1/4 teaspoon Roasted cumin seed powder - 1/2 teaspoon Black salt - Common salt - 1/2 teaspoon Sugar Method - 1. Methi Leaves Dosa - A simple addition of Fenugreek/Methi leaves to the regular Dosa Batter increases its taste as well as its nutritional value. Ingredients - 3 cup dosa batter 2 cup roughly chopped fenugreek leaves (methi leaves) 1 finely chopped green chilli Salt Method -  1. Take a mixing bowl, add dosa batter, fenugreek leaves, green chilli, salt as per requirement and give it a good mix. 2. Heat a pan grease it with oil, once the tawa is hot add ladle full of Fenugreek leaves dosa batter at the centre and start to spread it evenly in a circular motion.  3. Dosa batter - Dosa is considered to be one of the healthiest south Indian breakfast recipe. The perfect dosas can be made if you excel the art of making the batter in a right way.  Ingredients - - 3 cup rice - 1 cup urad dal - 1/2 cup flattened rice (poha) - 1 spoon fenugreek seeds - Salt - Water Method - 1. Wash and soak the rice, fenugreek seeds and urad dal overnight/6-8 hours separately. 2. Soak poha 30 minutes before grinding. 3. Take a mixer jar add urad dal, 1/4th cup water and grind it till you get smooth thick fluffly paste.  4. Transfer the urad dal paste into a mixing bowl. 5. Next add the flattened poha, rice, fenugreek seeds, 1/2 cup water and grind it to a smooth   paste. 6. Transfer the rice batter into the mixing bowl and mix the urad dal paste and rice batter nicely using your hand/laddle. 7. Allow the batter to ferment at room temperature for about 8-10 hours. 8. Traditional Fruit delight - A nutritious lip smacking recipe with the goodness of both fresh and dry fruits. No need to cook anything just cut, mix and serve. Must try recipe, as the delicious taste of this recipe cannot be explained in words. Ingredients - 3 dates (brown) 1 banana 1 apple 1 spoon honey 1 spoon ghee 2 spoon powdered jaggery 2 small pieces of rock sugar (mishri) 3 cashew nuts 3 almond 2 walnut 5-6 raisins. Method -  1. Chop dates, apple and banana into half inch cubes. 2. Now chop the dry fruits (almonds, cashews and walnuts) into very small pieces and keep it aside. 3. Sambhar Powder - A very essential spice blend found in every south Indian Household.Many versions of Sambhar Powder exists varying from region to region. This is my Granny's version of Sambhar Powder which she used to make & give every vacation we went to our native place. Ingredients -  2 spoon chana dal 2 spoon black urad dal 2 spoon toor dal 3/4 cup coriander seeds 8-10 curry leaves 10-12 red chilli 1/2 spoon fenugreek seeds 2 spoon cumin seeds 1 spoon pepper 1/2 spoon turmeric 1/4 teaspoon asafoetida Method -  1. Here's bringing to you the recipe of Paneer Butter Masala that is our favourite main course option for any dinner party. Paneer/Cottage Cheese - A delicious and nutritious food with the goodness of both protein and calcium that one must include in their diet regularly.  Ingredients -  1 litre milk 1 large sized lemon Method - 1. Take a pan and add milk to it and keep the flame medium and stir it often. 2. By the time milk is getting heated let's do some important preparations- 1. Squeeze the lemon juice and keep it ready for curdling the milk. 2. Keep the muslin cloth ready for straining purpose. 3. Have a bottle full of chilled water. For rinsing the paneer. 3. Once the milk starts to boil,  immediately start adding lemon juice and keep stiring the milk slowly while adding lemon juice to it. 4. You will get to see the milk starts curdling. Green Chilli Sabzi - A perfect recipe for all those spice food lovers there. Sometimes it's fun to add spice to your diet but make sure you don't overdo it. Ingredients -  10-12 fat green chilli (the one used for making bhaji and pickle) 1 cup gram flour (besan) 1 lemon 1/2 cup water Coriander leaves Salt 4-5 spoon sunflower oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds (jeera) 1/2 teaspoon fennel seeds (saunf) 1/2 teaspoon turmeric powder 1/2 teaspoon asafoetida (hing) 1/2 teaspoon garam masala powder Method- 1. Tomato Jam - A delicious and must try lip smacking sweet recipe with the goodness of tomatoes and dry fruits. And I'm sure you will fall in love with this recipe. :) Ingredients- 7-8 tomatoes 1 and 1/4 cup sugar 1/2 cup water 4 tablespoon ghee 6-7 dates 6 cashews 6 almonds 5-6 black raisins Method- 1. Deseed and finely cut the tomatoes and dates. 2. Chop cashews and almonds into small pieces. 3. Take a heavy bottom pan and add 1 tablespoon ghee, once the ghee is hot add cashews, almonds, raisins, dates and roast it for about 1minute and then transfer it to a plate and keep  it aside. 4. In the same pan add 3 tablespoon of ghee, once the ghee melts add tomatoes and saute it for 2 minutes. 5. Ingredients -  3 capsicum 10 garlic cloves 1 inch ginger 1 onion  3 tomatoes 2 potatoes 1/2 spoon turmeric powder. 5-6 dry red chilli 1 spoon coriander seeds 2 spoon peanut 1 bay leaf 2 inch cinnamon stick 1 spoon cumin seeds 1 cardamom 1 star anise 2 cloves 5 pepper corns Coriander leaves Method - 1. Boil the potatoes by adding salt. Peel off the skin cut it into big pieces and keep it aside. 2. Take a pan add peanuts, coriander seeds, dry red chilli, cumin seeds, cinnamon stick, bay leaf, star anise, clove, pepper, cardamom and dry roast all the ingredients for 5-6 minutes & transfer it into a plate. Lemon Rice - A super tangy spicy quick and easy to cook recipe for lunch with the goodness of lemon. Ingredients - 3 cup cooked basmati rice/normal rice. Two lemons 3 green chillies finely chopped. 1 dry red chilly 1 spoon chana dal 1 spoon urad dal 1/2 spoon mustard seeds 1/2 spoon cumin seeds 1/2 spoon turmeric powder 1/2 teaspoon asafoetida 1/4 teaspoon fenugreek seeds 5-6 curry leaves 1/4 cup peanuts 4spoon sesame oil/sunflower oil. Meetha and Teekha Paani - Paani puri is one of the most favourite dish of all. Two major ingredients which influences the taste of pani puri is Tangy Meetha pani and Spicy teekha paani. So here I am sharing the perfect way to make Meetha and Teekha paani. Meetha paani Ingredients- 10 dates Lemon sized tamarind 1 spoon Red chilly powder 1 cup powdered jaggery Method-  1. Soak the dates for at least 3-4 hours and then deseed the dates and grind it in a mixer jar by adding little water till you get a smooth thick paste. 2. Soak the tamarind in one cup of water for 20-25mins and then squash it with your hands to extract the tamarind juice and then throw the pulp away. 3. Next take a pan add the grinded dates paste, tamarind juice,  powdered jaggery, red chilly powder, one cup water and mix it nicely and switch on the flame. 4. Aaloo Kurma- A lip smacking side dish recipe which requires very less time to prepare and there will be no compromise on taste.  Ingredients- 3 potatoes 2 large onions 2 green chilli 1 inch ginger 2 spoon chickpea flour (besan) 1/2 teaspoon asafoetida (hing) 1/2 teaspoon turmeric powder 1 spoon chana dal 1/2 spoon mustard seeds 1/2 spoon cumin seeds 5-6 curry leaves Salt Method - 1. Pressure cook the potatoes for 3 whistles. Peel off the skin, simply break the potatoes with your hands(do not mash the potatoes) and keep it aside. 2. Roughly chop the onions into big pieces and slit the green chillies into half. 3. Take a pan, pour sunflower oil, once the oil is hot add cumin seeds, mustard seeds, chana dal,curry leaves and saute till the mustard seeds splutters and chana dal slightly changes its colour to light brown. 4. Ingredients -  6 bread slices 3-4 spoon soft salted butter. 1 cup grated cheese 2 spoon finely chopped garlic 1 spoon oregano 1 spoon red chilli flakes ½ Cup boiled Corn Method -  1. Take a bowl, add butter, garlic, oregano, red chilli flakes, grated cheese & boiled corn and combine it with the help of a fork spoon.
