Amla/Indian Gooseberry Instant pickle

Amla/Indian Gooseberry Instant Pickle - A healthy instant pickle recipe.
The high Vitamin C content in Amla has the ability to protect us against countless ailments.
Amla is easily available during winter.
But because of its sour, pungent,sweet & bitter taste many of us refrain from consuming it.
So here I am sharing with you all a must try instant pickle recipe.This is one way by which you can include Amla in your daily diet & this pickle really adds taste to your food.
This fruit is called Amlaki in Sanskrit & the word means Nectar of Life.
Truly Amla deserves its superfood status.


Ingredients -
- 20-25 amla
- ½ spoon turmeric powder
- 2 spoon coriander seeds
- 1 spoon fenugreek seeds
- 10-12 dry red chilli
- ½ spoon mustard seeds
-½ spoon cumin seeds
-½ spoon asafoetida
- bunch of curry leaves
- salt
-½ Spoon sugar
-½ cup sesame oil

Method
1. Take a pan wash and add the amla and pour water till all the amla is immersed in water and then add turmeric powder and one and half spoon salt and cook the amla for about 6-7mins.

2. Strain the water and allow the amla to cool down completely.

3. Next take a pan and dry roast coriander seeds, fenugreek seeds and red chilli for about 5-6 minutes and then grind it into fine powder once it cools down completely and keep it aside.

3. Next deseed the amla and grind it coarsely in a mixer jar without adding any water.  It's ok if there are small chunks of amla it will taste good.

4. Heat a pan pour sesame oil, once the oil is hot add mustard seeds, asafoetida, cumin seeds and wait till the mustard seed splutters.

5. Now keep the flame very low and add curry leaves, half spoon turmeric powder, grounded masala powder and give it a stir and then add the grinded amla & sugar immediately and mix it till the masalas are coated over the amla.

6. Cover and cook for about 10 minutes but make sure to open and stir and mash the amla in between at least 2-3 times.

Note:
1. If required add more oil in between if you find the mixture dry. You can also use sunflower oil but make sure to use sesame oil so that you will get the rich taste of this recipe.

2. This can be stored in refrigerator and can be consumed for 1 week.

3. Amla pickle can be served as side dish along with dosa, idli, curd rice, dal rice, chapati, paratha or you can simple mix and have it with plain rice and papad.

Do consume awla on a daily basis when it is available in abundance.
