Coconut Milk Delight - A very healthy vegan drink.
Coconut Milk is a versatile ingredient.
Here we are going to use coconut milk instead of regular canned milk.
It will increase the richness as well as the nutritional benefit of the drink.
Ingredients -
- 1 large Coconut
- 1 cup water
- 6 dates
- 10 almonds
- 10 cashew nuts
- 10 pistachios
- 1 banana
- 5 spoon honey
- 1/4 cup chia seeds
Method -
1. Soak almonds, cashew nuts, pistachios in water for an hour.
2. Grate the whole coconut.
3. Take a mixer jar add the grated coconut, 1/2 cup water and grind it to a smooth paste and extract the first coconut milk from it using a muslin cloth/strainer into a mixing bowl.
4. Again grind the coconut by adding the remaining 1/2 cup water and extract the second coconut milk in the same bowl.
5. Next add honey, chia seeds into the coconut milk and give it a good mix and keep it inside the fridge for one hour.
6. By the time, finely chop the soaked dry fruits, dates, banana and keep it aside.
7. Remove the coconut milk from the refrigerator and then add all the chopped dry fruits and fresh fruits and give it a good mix.
8. Pour it into a glass and serve it immediately.
Note:
You can also add various other fresh fruits of your choice like pomegranate, mango, jackfruit, strawberry etc.
2. Do not add more water than mentioned while extracting the coconut milk. If you add more water you will not get thick creamy textured milk.
3. If you don't have honey, you can add 4 spoon of powdered jaggery or sugar.
