Suran Erissery

 Suran Erissery-A very healthy & delicious dish made using the finest ingredients.Also the use of coconut oil & grated coconut makes this dish more delectable.
Ingredients -
250 gms Elephant Foot Yam(Suran)
1/2 teaspoon turmeric powder
1 cup water 
Salt
For grinding:
1/2 cup grated coconut
2 galic clove (optional)
2 green chilli
8-10 peppercorns
1 teaspoon cumin seeds
For Tempering-
4-5 spoon coconut oil
1 teaspoon mustard seeds
A bunch of curry leaves 
2 dry red chilli
1 teaspoon urad dal
2 spoon grated coconut

Method-
1. Wash the yam(Suran) nicely and cut it into small cubes and keep it aside

2. Take a pan add the cubed yam, turmeric powder, 1 cup water/add water just enough to soak the yam, salt and pressure cook it for about 4 whistles.

3. Take a mixer jar, add grated coconut, cumin seeds, green chilli, garlic cloves, peppercorns, 1/4th cup water and grind it into a smooth paste.

4. Once the yam is cooked add the grounded paste to it and mix it. Add water if required to adjust the consistency and allow the mixture to boil for about 7-8mins.

5. Take a tadka pan, pour coconut oil, once the oil is hot add mustard seeds, cumin seeds and wait for the mustard seeds to splutter, next add urad dal, curry leaves, red chilli and grated coconut and saute it till the grated coconut colour changes to golden brown.

6. Now add the tempering to the gravy, stir and switch off the flame.

Note: 
1. You can also add 1/4th cup red cow peas(Lobhia/Chavli) to this dish. You will have to soak the red cow peas for 3-4 hours and then pressure cook it along with the yam.

2. Make sure you use only coconut oil while making Erissery to enjoy the actual richness of the dish.

3. Do not add more water the gravy should be thick.

4. You can serve Erissery as side dish with sambhar rice, roti, dosa and iddiyappam
.
