Sambhar Powder

Sambhar Powder - A very essential spice blend found in every south Indian Household.Many versions of Sambhar Powder exists varying from region to region.
This is my Granny's version of Sambhar Powder which she used to make & give every vacation we went to our native place.

Ingredients
2 spoon chana dal
2 spoon black urad dal
2 spoon toor dal
3/4 cup coriander seeds
8-10 curry leaves
10-12 red chilli
1/2 spoon fenugreek seeds
2 spoon cumin seeds
1 spoon pepper
1/2 spoon turmeric
1/4 teaspoon asafoetida

Method
1. Take a pan and dry roast chana dal, black urad dal and toor dal for 5-6 minutes separately and transfer it into plate. (Dals should change slightly golden in colour and turn aromatic) 

2. Next add coriander seeds, red chilli, cumin seeds, pepper, fenugreek seeds, curry leaves all together and dry roast them for 5-6 minutes and transfer it to a plate.
(Nice aroma should come from the above ingredients and make sure the curry leaves turns crispy)

3. Let all the ingredients cool down completely.

4. Take a mixer jar add all the roasted ingredients, turmeric powder, asafoetida and grind it into a very fine powder.

5. Transfer the sambhar powder into a glass jar and keep it in a cool dry place. This masala can be used for about 3 months.

Note : 
You can also use this powder for making Rasam & Dry Curries to name a few viz Potato Curry,Beans curry,Raw Banana Curry,etc.
All such dry curries are famously known as Poriyal in Tamil Nadu & served as a side dish for Rasam & Sambhar.
