Pudina Rice/Mint Leaves Rice

Pudina Rice - A healthy, refreshing and delightful recipe, a dash of mint which has anti inflammatory properties can set almost anything right in your diet.


Ingredients-
3 cup cooked rice
2 potatoes (cut it into large pieces)
1 cup mint leaves (pudina)
1 cup coriander leaves
4 green chillies
1 lemon
1 spoon chana dal
1 spoon urad dal
1 spoon coriander seeds
1 teaspoon cumin seeds
2 inch cinnamon stick
4 garlic cloves
1/2 inch ginger piece
4-5 spoon sunflower oil

Method-
1. Take a pan and dry roast chana dal, urad dal, coriander seeds, cinnamon and cumin seeds for 5-6 mins on medium flame and transfer it into a plate.

2. Add one spoon oil and saute green chilli, ginger, garlic for about 4-5 mins and then add the coriander leaves and mint leaves to it and saute it for about 1 minute and switch off the flame and tranfer it into a plate and allow the mixture to cool down completely.

3. Take a mixer jar add all the dry ingredients,  sauteed ingredients(green chilly, garlic, ginger, mint leaves and coriander leaves), one small piece of jaggery and grind it into a coarse paste by adding half cup water.

4. Take a pan add 4 spoon oil, once the oil is hot add mustard seeds, cumin seeds and let the mustard seeds splutter. Now  add the potatoes, salt, turmeric powder and saute the potatoes and cook it by just sprinkling water. 

5. Once the potatoes are done add the mint leaves paste that you have prepared earlier and saute it for about a minute and then add the cooked rice and squeeze a lemon and give it a good mix and switch off the flame.

Note: you can serve pudina/mint leaves rice for lunch with papad or fryums.
