Lemon Rice - A super tangy spicy quick and easy to cook recipe for lunch with the goodness of lemon.
Ingredients -
3 cup cooked basmati rice/normal rice.
Two lemons
3 green chillies finely chopped.
1 dry red chilly
1 spoon chana dal
1 spoon urad dal
1/2 spoon mustard seeds
1/2 spoon cumin seeds
1/2 spoon turmeric powder
1/2 teaspoon asafoetida
1/4 teaspoon fenugreek seeds
5-6 curry leaves
1/4 cup peanuts
4spoon sesame oil/sunflower oil.
Salt
A bunch of finely chopped coriander leaves
Method -
1. Take a pan add sesame oil, once the oil is hot add mustard seeds, cumin seeds and wait till the mustard seed splutters.
2. Now add curry leaves, green chillies, chana dal, urad dal, fenugreek seeds, peanuts and roast it on medium flame for about 4-5mins.
3. Next add asafoetida powder, turmeric, dry red chilly and salt as per your requirement saute it for half a minute and switch off the flame.
4. Now squeeze the lemon juice into the pan, add cooked rice and coriander leaves and give it a good mix.
Note:
While cooking make sure rice remains separate grains and non-sticky. Try to use basmati rice and sesame oil in order to get the rich taste of lemon rice.
Don't serve the lemon rice as soon as you finish cooking. Let it rest for about 15-20mins and then serve it with potato fry/potato chips.
