Tomato Jam - A delicious and must try lip smacking sweet recipe with the goodness of tomatoes and dry fruits. And I'm sure you will fall in love with this recipe. :)
Ingredients-
7-8 tomatoes
1 and 1/4 cup sugar
1/2 cup water
4 tablespoon ghee
6-7 dates
6 cashews
6 almonds
5-6 black raisins
Method-
1. Deseed and finely cut the tomatoes and dates.
2. Chop cashews and almonds into small pieces.
3. Take a heavy bottom pan and add 1 tablespoon ghee, once the ghee is hot add cashews, almonds, raisins, dates and roast it for about 1minute and then transfer it to a plate and keep it aside.
4. In the same pan add 3 tablespoon of ghee, once the ghee melts add tomatoes and saute it for 2 minutes.
5. Now add water and sugar, mix and cook on medium flame for about 10 minutes and then cook on low flame till the water reduces.
6. Once the water evaporates and mixture starts to thicken, start to mix and mash the tomatoes with spoon in regular intervals so that the tomato pulp does not stick to the pan.
7. Now add the dry fruits and dates into the tomato jam and mix it and switch off the flame.
8. Allow the jam to cool down completely and then tranfer it to a glass bottle.
Note:
* It is really important to use red and juicy tomatoes for making this Jam.
* Do not add more than half cup of water.
* You can add more 3-4 spoon ghee in between if you want to.
* Total time required to prepare this dish - 35-40 minutes.
* You can serve this tomato Jam as dessert after your lunch or dinner or it can be served as side dish along with poori, roti and toasted bread.
