Puran Poli

 Puran Poli - A sweet healthy recipe which requires effort, patience & most importantly expertise which you will get by repeated making.But the mesmerizing taste of puran poli in every bite is well worth the effort.

Ingredients-
1 cup chana dal
1/2 spoon turmeric powder
1 cup powdered jaggery
1/2 spoon dry ginger powder
1/4 spoon cardamon powder
2 cup wheat flour
1 cup maida
4-5 spoon oil
Salt
1/2 cup ghee

Method -
1. Soak chana dal for 3-4 hours.

2. Take a bowl add wheat flour, maida, salt, 2 spoon oil, a pinch of turmeric powder and knead the dough as you do for making rotis and keep it aside by covering it with a damp cloth.

3. Next pressure cook the chana dal for 4 whistles and then Strain the water and keep the chana dal aside for about 10-15mins.
(You can use the chana dal water for making Amti/rasam)

4. Take a pan add two spoon ghee, chana dal, powdered jaggery, dry ginger powder, cardamom powder and cook the mixture by mixing and mashing it till the puran becomes dry and holds shape.

5. Allow the mixture to cool down completely and then grind it using a mixer jar and sieve it nicely to get fine damp powdered puran.
Or
You can simply mash the puran once again nicely using a masher to get a smooth puran.

6. Next make small lemon sized balls of puran and stuff it inside the wheat dough and start rolling it thin.

7. Next place a tawa add generous amount of ghee and cook both the sides of poli till you get nice brown spots over it.

Note: you can serve  Puran poli with sweetened coconut milk.
