Curry Leaves Rice

Curry Leaves Rice-This is one of the most simplest & healthiest recipe.Curry leaves are rich source of iron & Folic acid but many a times we do not prefer to eat it because of its peculiar taste but this recipe tastes really well..

Ingredients - 
1 cup curry leaves
6 spoon chana dal
2 spoon urad dal
4-5 dried red chillies
1 spoon cumin seeds
4-5 pepper corns
2 spoon coriander seeds
1/4 spoon asafoetida powder
1/2 teaspoon mustard seeds
2 cups cooked rice
1/4 cup roasted peanuts
4 spoon sesame oil/sunflower oil

Method - 
1. Take a pan and first dry roast curry leaves till it becomes crunchy and then transfer it to a plate.

2. Next roast the chana dal and urad dal till it changes colour to slight brown and transfer it to a plate.

3. At last dry roast coriander seeds, cumin seeds, pepper and red chillies for about 3-4mins and transfer it to a plate.

4. Allow all the dry ingredients to cool completely.

5. Take a mixer jar, add all the dry roasted ingredients, salt and asafoetida powder and grind it to a coarse powder and keep it aside.

6. Take a pan add sesame oil, once the oil is hot add 1/2 teaspoon mustard seeds, 1/4th teaspoon cumin seeds, 1 teaspoon urad dal and wait till the mustard seeds splutter and then add some roasted peanuts and 4-5 fresh curry leaves and saute it for about half minute.

7. Next add cooked rice, salt and 4 spoonful of curry leaves powder and give it a good mix. 

8. Cover and cook for about 2-3mins and switch off the flame.

Tip-
1. Before dry roasting the curry leaves make sure you wash and pat dry the curry leaves Or you can just leave it in strainer after washing it till the leaves dries off naturally.

2. You can make the curry leaves powder in large qauntity and store it in a glass jar at cool dry place for about 10 days and use it whenever u want to.

3. While making the curry leaf rice follow the measurement of 1:2 i.e. if you take 1 cup of boiled rice add 2 Spoon of curry leaf powder.

Note: You can serve curry leaves rice with potato fry/papad/fryums for lunch.
