Orange Cake

Orange Cake - During festive season & celebration one thing that tops the list is Cake.
Cakes always steals the show.
So here I am sharing with you all a Orange Cake recipe that you can easily make at home & surprise your family & friends.

Ingredients -

- 1 orange
- 1 cup all-purpose flour (Maida)
- 1/4 cup butter/ghee
- 1/4 cup hung curd
- 3/4 cup sugar
- a pinch of orange food colour
- 1/4 cup tutti frutti
- 3-4 dried figs (anjeer)
- 3-4 dried apricots
- 6 Almonds
- 6 cashew nuts
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda

Method -

1. Sieve all the dry ingredients(All-purpose flour, baking powder & baking soda) and keep it aside.


2. Cut the dry fruits (dried figs, dried apricots, almonds, cashews) into  small pieces.


3. Now take a grater and grate the orange to get the orange zest. (Once you get two spoonful of zest stop grating) and then from the same orange extract the orange juice.


4. Next take a mixing bowl, add sugar, butter, hung curd, orange food colour and beat it nicely using a  hand/electric beater till you get creamy smooth texture.


5. Now add the sieved mixture into the wet mixture in batches and mix it gradually.


6. Once done with all the mixing finally add the orange zest, chopped dry fruits, orange juice and mix it nicely to get a thick cake batter. 


7. Place a kadai/pan, add 2 cup of salt and place a stand over it and pre-heat the kadai for about 10mins.


8. By the time pan is getting heated up,place a butter paper in the cake tin & grease it with butter and pour the cake batter into it and garnish it with some more chopped dry fruits.


9. Place the cake tin over the pre-heated pan and cover it with a lid and allow it to bake for about 45-50minutes.


10. After 45 minutes check whether the cake is ready by inserting a toothpick/knife into the cake. While removing the toothpick/knife the batter should not stick to it. If it sticks then cook for some more time.


11. Once done, allow the cake to cool down completely and demould it and slice it into medium sized cubes and serve it with whipped cream if you wish or you can also simply enjoy it without cream.


Note:

1. Strain the orange juice just while making the cake. Do not extract the juice long before otherwise the juice may turn bitter.

2. You can also add cheeries, walnuts, pumkin seeds, berries, etc as per your choice.

3. You can skip adding the food colour if you don't want to.

4. You can also replace 1 cup all-purpose flour and sugar with (1/2 cup wheat flour + 1/2 cup all purpose flour) and jaggery for making a healthier version of this cake.

5. Enjoy this nutty & chunky orange cake during tea-time or simply enjoy it as a dessert after meals.
