Meetha and Teekha paani

Meetha and Teekha Paani - Paani puri is one of the most favourite dish of all. Two major ingredients which influences the taste of pani puri is Tangy Meetha pani and Spicy teekha paani. So here I am sharing the perfect way to make Meetha and Teekha paani.

Meetha paani

Ingredients-
10 dates
Lemon sized tamarind
1 spoon Red chilly powder
1 cup powdered jaggery

Method- 
1. Soak the dates for at least 3-4 hours and then deseed the dates and grind it in a mixer jar by adding little water till you get a smooth thick paste.

2. Soak the tamarind in one cup of water for 20-25mins and then squash it with your hands to extract the tamarind juice and then throw the pulp away.

3. Next take a pan add the grinded dates paste, tamarind juice,  powdered jaggery, red chilly powder, one cup water and mix it nicely and switch on the flame.

4. Boil the mixture till the jaggery melts and the raw smell of tamarind goes away. It takes around 15-20mins. Make sure you are  stirring the mixture in between and then switch off the flame and allow it to cool down completely.

Teekha Paani

Ingredients -
1 cup mint leaves
1 cup coriander leaves
3 green chillies
1/4 teaspoon rock salt
1/2 teaspoon chat masala
1 lemon
1/2 inch ginger
2 garlic clove
1/2 cup boondi

Method-
1. Take a mixer jar, add the mint leaves, coriander leaves, ginger, garlic, green chillies, rock salt and grind it to a smooth paste by adding half cup water.

2. Transfer the grounded paste into a bowl, add one or one and half cup water, chat masala, salt as per your requirement, lemon juice and mix it.

3. Add the boondi into the teekha paani, stir and refigerate for an hour.

Note: Take puri, fill some boiled mashed potato/steamed moong sprouts, add little bit of meetha pani and then fill your puri with teekha paani and enjoy your snack till your heart is content.
