Moong Dal Kheer

Moong Dal Kheer - One well-known dessert that is served on important occasions in every Indian home is kheer. Kheer and joyous celebrations go hand in hand. Moong Dal Kheer is a healthy & easy recipe. Ingredients - - 1/2 cup split yellow moong dal - 1 cup powdered jaggery - 1 cup coconut thick milk (first milk) - ¼th cup chopped cashew nuts -2 spoon ghee - 1/2 teaspoon cardamom powder Method: 1. Take a pan dry roast moong dal slightly just for about a minute or till you get nice aroma out of it. (Colour should not change) 2. Transfer the roasted moong dal into a bowl and rinse the dal twice with water and keep it aside. 3. Next add 2 cups water into a pan, once the water starts to boil add the roasted and rinsed moong dal into the boiling water and cook it till it becomes soft. 4. Foxtail Millet Kheer - Kheer is a traditional Indian dessert that can be prepared in a number of ways. I am sharing one such kheer recipe made using healthiest ingredient i e. Foxtail Millet. Millets are actually a very good source & a better replacement for rice & wheat. Foxtail Millet is rich in dietary fibre & helps to combat various health ailments. Ingredients - 1/4th cup foxtail millet - 3 spoon sago seeds (sabudana)  - 1 litre milk - 2 spoon ghee - 5 almonds, cashew nuts and walnuts each - a handful of raisins - 10-12 saffron strands - 1 cup jaggery powder Method: 1. Dry roast the foxtail millet and sago seeds for about 3-4 mins on medium flame and then transfer it to a bowl and rinse it with water. Soak the millets and sago seeds for about 1 hour.  2. Take a pan add ¼th cup water, add jaggery powder and cook till you get thick and sticky syrup like consistency. Allow it to cool completely.  3. Choco Banana Oats Recipe -  A simple and healthy recipe for your morning breakfast or to satisfy your sweet craving. It is quick to make & fantastic recipe. Ingredients :  - 1/4th cup oats - 1/2 cup milk - 2-3 spoon powdered jaggery - 1 spoon cocoa powder - 1 banana - 2-3 almonds, cashews and walnuts  Method : 1. Rinse the oats and soak it in 1/2 cup water for about 15 mins and roughly chop the dry fruits and keep it aside.  2. Take a pan add the soaked oats along with the water, add milk and cook it for about 5 mins. Once the oats have thickened, add the chocolate powder and powdered jaggery, stir well, and simmer for about one minute before turning off the heat. 3. Ganish it with chopped dry fruits and sliced banana and serve hot. Sandwich Masala - Sandwich is one of the dish that everyone prefer to take to work, school, or picnics to be eaten as part of a packed lunch. Sandwich is available in many different varieties but the masala/spice powder that is sprinkled makes the bombay sandwich a favourite of many. So here I am sharing with you the sandwich masala for making the perfect bombay sandwich. Ingredients - 2 teaspoon cumin seeds - 1 teaspoon cloves - 1 teaspoon black pepper  - 1 teaspoon fennel seeds - 1/2 teaspoon hing - 1/2 teaspoon Dry Mango Powder (Aamchur powder) - 1/2 teaspoon black salt  - Salt as per requirement  Method : 1. Paal Payasam

Paal Payasam - In southern parts of India, kheer is called Payasam. It is one of the traditional dish made & served as prasad on almost every special occasions. Payasam is made in many variations. This Pal Payasam is mainly made using rice, mishri & milk. Ingredients : - 1/4th cup rice - 1 and 1/2 litre milk - 1 and 1/4th cup rock candy sugar - dryfruits (10-15 almonds, cashews, pistachios each and handful of raisins) Method: 1. Soak all the dryfruits 4-5 hours in water. 2. Wash and soak the rice for 15-20 minutes. 3. Take a heavy bottom pan, heat it on a medium flame.  4. Once the milk starts to boil add the soaked rice and mix it gently. 5. Do stir the milk regularly when it is boiling in order to prevent the milk from sticking at the bottom of the pan. 6. Continue to simmer the milk by stirring it regularly till the rice is cooked completely. 7. You can also mash the rice a little bit. 8. Here is one such healthy recipe to enjoy with your tea. Ingredients: - 1 cup whole green moong dal - 1/2 cup Sago seeds (Sabudhana) - 1 medium sized onion - 1 green chilli - a bunch of curry leaves - 1/2 inch ginger piece (grated) - salt - a handful of coriander leaves (finely chopped) - 1 spoon Eno (fruit salt) Method : 1. Wash and soak Moong dal and sago seeds for 6-7 hours. 2.  Grind soaked sago seeds and moong dal into a fine paste and transfer it to a bowl. The consistency of the batter should be thick like that of Idli batter. (Grind the sago seeds first and then moong dal by adding very less amount of water) 3. Lauki/Bottle gourd Halwa with Jaggery - A sweet healthy guilt-free treat. Eating bottle gourd provides a cooling effect on the body & has immense health benefits. Halwas are all time favourites of everyone. This recipe is made with jaggery with is much healthier. Ingredients :  - 2 lauki/bottle gourd - 1 and half cup powdered jaggery - 1/2 litre milk - 4-5 spoon ghee - chopped dry fruits: 10 almonds, 10 cashews, 10 postachios. - a handful of raisins - 1/2 teaspoon cardamom powder. Method : - Rinse, peel and grate the lauki. - Take a heavy bottom pan, add 2 spoon ghee, once the ghee is hot add grated lauki and saute it for about 10-12 minutes on medium flame. - Next add milk and give the mixture a good mix. - Continue to cook on medium flame and keep stirring it in regular intervals. - You will find that the milk is absorbed fully. Basundi - Basundi is a traditional sweet recipe made by simmering the milk till it reduces and reaches a thicker & creamier  consistency. It is often made during festivals & functions in India. A healthy desert to relish chilled or warm. Ingredients : - 1 and 1/2 litres full fat milk - 1/4th cup powdered Mishri Sugar (also known as rock sugar/crystal sugar) - 10 almonds - 10 cashew nuts - 10 pistachios - few strands of kesar - 1/2 teaspoon cardamom powder - handful of black raisins Method : 1. Pour milk into a heavy bottom pan and start heating it on a medium flame.  2. Once the milk is warm take 2-3 spoons of milk in a bowl and soak few strands of saffron in it and keep it aside. 3. Allow the milk to boil. In between you will find layers of cream forming on top of the milk. Just break and give it a good mix using a spatula or whisk. 4. Capsicum Green Peas Chutney - Are you bored of having the same common regular chutney?  So here's a twist. We are gonna make a different kind of healthy chutney using Capsicum and Green peas. Ingredients : - 1 capsicum - 1 Onion - ¼th cup green peas - a handful of coriander leaves - 2 garlic  - 1 inch ginger - 4 pepper corns - 2 green chilli - ¼th teaspoon cumin seeds - ½ teaspoon jaggery powder - salt Method : 1. Take a pan add 1 teaspoon oil, once the oil is hot add onion and saute it till it becomes transparent and slightly changes to golden brown. Once done transfer the onion to a plate. 2. In the same pan add 1 teaspoon oil and saute the green peas and capsicum for 5-6 mins. Check whether the green pea is cooked properly and then transfer it to the same plate in which you have kept the sauteed onions. 3. Allow the vegetables to cool down completely. 4. Oats Delight - Oats are incredibly nutritious & are gluten-free. This recipe is really quick to make & a very healthy breakfast option. Ingredients : - 1/4th cup oats - 1/2 cup water - 2 cups of milk -1/4 cup powdered jaggery - handful of chopped dryfruits (almonds, cashews, pistachios) - 2 spoon tuti-frutti Method 1. Take a heavy bottom pan, add oats and dry roast it for about 1 minute  2. Next add water  and cook for about 2-3 mins. 3. Now add the milk and cook on medium flame till the mixture begins to thicken slightly to a porridge consistency. (It may take about 6-7 mins) 4. Switch off the flame and then add the powdered jaggery, chopped dry fruits and give it a good mix. 5. Ragi Ella Ada - Ella Ada is a famous sweet dish prepared in the southern states. Originally, the outer cover is made using rice Flour but here I am sharing this recipe using Ragi flour. Including Ragi in your regular diet proves to be very beneficial & also this Ragi Ella Ada tastes really good. Ingredients :  For stuffing : - 1 cup grated coconut - 3/4th cup powdered jaggery - 2 spoon ghee - 1/2 teaspoon cardamom powder - 10 to 12 broken cashew nuts For dough : - 2 cup ragi flour - 1/2 teaspoon salt - 1 spoon ghee - water (as required) - 2 medium sized banana leaf Method : 1. Take a pan and boil 1 cup water by adding 1/2 teaspoon salt to it. 2. Next add the boiling water gradually to the ragi flour and mix it using a spoon, cover and keep it aside to cool down a bit. 3. Once the mixture cools down a bit, knead with your hands by adding more water if required into a smooth dough and grease it with ghee and keep it aside. 4.
