Basundi

Basundi - Basundi is a traditional sweet recipe made by simmering the milk till it reduces and reaches a thicker & creamier  consistency. It is often made during festivals & functions in India. A healthy desert to relish chilled or warm.
Ingredients:
- 1 and 1/2 litres full fat milk
- 1/4th cup powdered Mishri Sugar (also known as rock sugar/crystal sugar)
- 10 almonds
- 10 cashew nuts
- 10 pistachios
- few strands of kesar
- 1/2 teaspoon cardamom powder
- handful of black raisins

Method:
1. Pour milk into a heavy bottom pan and start heating it on a medium flame. 

2. Once the milk is warm take 2-3 spoons of milk in a bowl and soak few strands of saffron in it and keep it aside.

3. Allow the milk to boil. In between you will find layers of cream forming on top of the milk. Just break and give it a good mix using a spatula or whisk.

4. Continue to simmer and keep on stirring continuously and slowly to make sure that the milk doesn't stick to the bottom of the pan.

5. Continue to simmer the milk till it reduces to half the quantity that you have added.

6. Once the milk is reduced to half, add soaked saffron milk, Sugar(Mishri) powder, chopped dryfruits (almonds,cashews and pistachios) cardamom powder, black raisins and give it a good mix.

7. Mix and cook for few more minutes till you find all the ingredients have blended well and you get nice aroma out of it. Make sure that the consistency is slightly thick and creamier.

8. Switch off the flame and allow it to cool down a bit and refrigerate for atleast 2-3 hours before serving it.

Note:
1. You can adjust the amount of Mishri sugar powder in this recipe as per your requirement.

2. You can also add jaggery syrup instead of Mishri sugar. Make sure to add the jaggery syrup only after removing the thickened milk from the flame.
