Capsicum Pulao

Capsicum Pulao - Pulao is all time favourite one pot recipe which is less time consuming, aromatic, healthy and the Capsicum here adds a special richness to this dish. Ingredients -  3 cup cooked basmati rice 2 potatoes 2 capsicum 2 onions 3 green chilli 3-4 spoon ghee 2 inch cinnamon stick 2 bay leaf 1 star anise 2 clove 2 cardamom 4 peppercorns 1/2 teaspoon chilli powder 1 teaspoon Maggi masala (optional) 1 teaspoon cumin seeds Method - 1. Chop all the vegetables (onions, capsicum and potato)and slit the green chilli into half and keep it aside. 2. Take a pan add ghee, once the ghee melts add cumin seeds, cinnamon stick, bay leaf, stone flower, star anise, clove, cardamom, peppercorns and saute it for half a minute. 3. Next add onion and green chilli and saute it till the onion becomes slight brown in colour. 4. Now add capsicum, potato, salt, chilli powder and stir fry it along with onion, close the lid and allow it to cook for about 7-8minutes. 5. Check if the potatoes are cooke

Watermelon juice - watermelon due to its high water content will keep you hydrated. So here's a cool refreshing healthy drink packed with vitamins and nutrients for you...  Ingredients-  watermelon 1 lemon Ice cubes 1/4 teaspoon chat masala 1/4 teaspoon roasted cumin seed powder Salt Method- 1. Deseed and cut the water melon into small sized cubes. 2. Take a mixer jar add the watermelons and ice cubes, grind it and strain the juice or you can directly pour the juice into your bowl. 3. Squeeze a lemon and then add chat masala, roasted cumin seed powder, salt(as per your requirement) and give it a good mix. 4. Pour the juice into a glass and serve it immediately. Suran Erissery

 Suran Erissery-A very healthy & delicious dish made using the finest ingredients.Also the use of coconut oil & grated coconut makes this dish more delectable. Ingredients - 250 gms Elephant Foot Yam(Suran) 1/2 teaspoon turmeric powder 1 cup water  Salt For grinding: 1/2 cup grated coconut 2 galic clove (optional) 2 green chilli 8-10 peppercorns 1 teaspoon cumin seeds For Tempering- 4-5 spoon coconut oil 1 teaspoon mustard seeds A bunch of curry leaves  2 dry red chilli 1 teaspoon urad dal 2 spoon grated coconut Method- 1. Wash the yam(Suran) nicely and cut it into small cubes and keep it aside 2. Take a pan add the cubed yam, turmeric powder, 1 cup water/add water just enough to soak the yam, salt and pressure cook it for about 4 whistles. 3. Green Chilli Sabzi - A perfect recipe for all those spice food lovers there. Sometimes it's fun to add spice to your diet but make sure you don't overdo it. Ingredients -  10-12 fat green chilli (the one used for making bhaji and pickle) 1 cup gram flour (besan) 1 lemon 1/2 cup water Coriander leaves Salt 4-5 spoon sunflower oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds (jeera) 1/2 teaspoon fennel seeds (saunf) 1/2 teaspoon turmeric powder 1/2 teaspoon asafoetida (hing) 1/2 teaspoon garam masala powder Method- 1. Deseed and slice the green chillies into large pieces vertically. 2. Take a pan dry roast the gram flour on low flame  till the raw smell goes. It takes about 6-7 minutes.  Puran Poli - A sweet healthy recipe which requires effort, patience & most importantly expertise which you will get by repeated making.But the mesmerizing taste of puran poli in every bite is well worth the effort. Ingredients- 1 cup chana dal 1/2 spoon turmeric powder 1 cup powdered jaggery 1/2 spoon dry ginger powder 1/4 spoon cardamon powder 2 cup wheat flour 1 cup maida 4-5 spoon oil Salt 1/2 cup ghee Method - 1. Soak chana dal for 3-4 hours. 2. Take a bowl add wheat flour, maida, salt, 2 spoon oil, a pinch of turmeric powder and knead the dough as you do for making rotis and keep it aside by covering it with a damp cloth. 3. Tomato Jam - A delicious and must try lip smacking sweet recipe with the goodness of tomatoes and dry fruits. And I'm sure you will fall in love with this recipe. :) Ingredients- 7-8 tomatoes 1 and 1/4 cup sugar 1/2 cup water 4 tablespoon ghee 6-7 dates 6 cashews 6 almonds 5-6 black raisins Method- 1. Deseed and finely cut the tomatoes and dates. 2. Chop cashews and almonds into small pieces. 3. Take a heavy bottom pan and add 1 tablespoon ghee, once the ghee is hot add cashews, almonds, raisins, dates and roast it for about 1minute and then transfer it to a plate and keep  it aside. 4. In the same pan add 3 tablespoon of ghee, once the ghee melts add tomatoes and saute it for 2 minutes. 5. Now add water and sugar, mix and cook on medium flame for about 10 minutes and then cook on low flame till the water reduces.  6. Restaurant style Potato Capsicum Gravy - A very delicious & preferred side dish for lunch & dinner. Ingredients -  3 capsicum 10 garlic cloves 1 inch ginger 1 onion  3 tomatoes 2 potatoes 1/2 spoon turmeric powder. 5-6 dry red chilli 1 spoon coriander seeds 2 spoon peanut 1 bay leaf 2 inch cinnamon stick 1 spoon cumin seeds 1 cardamom 1 star anise 2 cloves 5 pepper corns Coriander leaves Method - 1. Boil the potatoes by adding salt. Peel off the skin cut it into big pieces and keep it aside. 2. Take a pan add peanuts, coriander seeds, dry red chilli, cumin seeds, cinnamon stick, bay leaf, star anise, clove, pepper, cardamom and dry roast all the ingredients for 5-6 minutes & transfer it into a plate. Once the mixture is cool grind it into a coarse powder. 3. Crush the garlic and ginger using mortar and pestle. Roughly Chop the capsicum and onions into big pieces. Lemon Rice - A super tangy spicy quick and easy to cook recipe for lunch with the goodness of lemon. Ingredients - 3 cup cooked basmati rice/normal rice. Two lemons 3 green chillies finely chopped. 1 dry red chilly 1 spoon chana dal 1 spoon urad dal 1/2 spoon mustard seeds 1/2 spoon cumin seeds 1/2 spoon turmeric powder 1/2 teaspoon asafoetida 1/4 teaspoon fenugreek seeds 5-6 curry leaves 1/4 cup peanuts 4spoon sesame oil/sunflower oil. Salt A bunch of finely chopped coriander leaves Method - 1. Take a pan add sesame oil, once the oil is hot add mustard seeds, cumin seeds and wait till the mustard seed splutters.  2. Now add curry leaves, green chillies, chana dal, urad dal, fenugreek seeds, peanuts and roast it on medium flame for about 4-5mins. 3. Meetha and Teekha Paani - Paani puri is one of the most favourite dish of all. Two major ingredients which influences the taste of pani puri is Tangy Meetha pani and Spicy teekha paani. So here I am sharing the perfect way to make Meetha and Teekha paani. Meetha paani Ingredients- 10 dates Lemon sized tamarind 1 spoon Red chilly powder 1 cup powdered jaggery Method-  1. Soak the dates for at least 3-4 hours and then deseed the dates and grind it in a mixer jar by adding little water till you get a smooth thick paste. 2. Soak the tamarind in one cup of water for 20-25mins and then squash it with your hands to extract the tamarind juice and then throw the pulp away. 3. Next take a pan add the grinded dates paste, tamarind juice,  powdered jaggery, red chilly powder, one cup water and mix it nicely and switch on the flame. 4. Boil the mixture till the jaggery melts and the raw smell of tamarind goes away. It takes around 15-20mins. Make sure you are  stirring the mixture in between and th

Pudina Rice - A healthy, refreshing and delightful recipe, a dash of mint which has anti inflammatory properties can set almost anything right in your diet. Ingredients- 3 cup cooked rice 2 potatoes (cut it into large pieces) 1 cup mint leaves (pudina) 1 cup coriander leaves 4 green chillies 1 lemon 1 spoon chana dal 1 spoon urad dal 1 spoon coriander seeds 1 teaspoon cumin seeds 2 inch cinnamon stick 4 garlic cloves 1/2 inch ginger piece 4-5 spoon sunflower oil Method- 1. Take a pan and dry roast chana dal, urad dal, coriander seeds, cinnamon and cumin seeds for 5-6 mins on medium flame and transfer it into a plate. 2. Add one spoon oil and saute green chilli, ginger, garlic for about 4-5 mins and then add the coriander leaves and mint leaves to it and saute it for about 1 minute and switch off the flame and tranfer it into a plate and allow the mixture to cool down completely. 3.
