- 10 baby potatoes
- ½ cup corn flour
- 1 tsp chilli flakes
- 1 tsp mixed herbs
- ½ tsp black pepper powder
- ¾ cup Cajun sauce
- 2 tsp onion, chopped
- 2 tsp coriander, chopped
- 1 tsp butter
Method:
Boil the potatoes: Add baby potatoes and ½ tsp salt to a pot. Cook for 2 whistles until about 90% done.
Flatten the potatoes: Remove and gently press each potato to slightly flatten.
Prepare batter: In a bowl, mix corn flour, chilli flakes, mixed herbs, black pepper powder, and 1 tsp salt. Gradually add water and stir to form a smooth batter.
Coat and toast: Dip the flattened potatoes in the batter, ensuring they are evenly coated. Heat a tawa pan, apply butter, and cook the coated potatoes, flipping both sides, until golden brown and crisp.
