Ingredients:
- Milk – 1 litre
- Lemon – 2 (for curdling the milk)
- Kashmiri red chilies – 4 (for color)
- Dried Red chilies – 4 (for an extra spicy kick)
- Garlic cloves – 5
- Soaked cashew nuts – 15
- Salt – as per taste
Method:
1. Preparing the Aromatic Base
Dry roast the garlic in a pan for 4-5 minutes until aromatic.
Toss in both types of red chilies and sauté for a minute.
Transfer them to a plate and let them cool slightly.
2. Making Fresh Paneer
Heat the milk in a heavy-bottomed pan and bring it to a boil.
Once boiling, add lemon juice gradually, stirring continuously until the milk curdles and whey separates.
Drop in a few ice cubes to halt the cooking process, then strain it using a fine cloth.
Squeeze out excess liquid and hang the paneer for 15 minutes.
3. Blending Everything Together
Grind the roasted garlic and chilies into a coarse powder using a mixer.
Add the freshly made paneer along with soaked cashew nuts and blend into a smooth, creamy paste.
Adjust the consistency by adding a little milk, ensuring a velvety texture.
