Rava Idli

Rava Idli
Rava Idli is a slight variation in the original idli preparation.
If you want to prepare Idli but you don't have the batter ready,do try this recipe you will love it.
It can be served as breakfast, evening snack or dinner.
It is a healthy, tasty & easy to prepare recipe that you can opt for.


Ingredients:
- 1 cup rava
- 1/2 cup fresh curd
- 1 medium size grated carrot
- a handful of chopped coriander leaves
- 1 green chilli finely chopped
- 1 spoon grated ginger
- 2 spoon ghee
- 10 split cashews
- 1/2 teaspoon asafoetida powder
- 1 teaspoon fruit salt 
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon chana dal
- 5-6 curry leaves finely chopped
- salt

Method:

1. Take a pan heat 1 spoon ghee, once the ghee melts add the slit cashews and fry till it becomes golden brown and then transfer it to a plate.

2. In the same pan add 1 more spoon and then add mustard seeds and allow it to splutter. Next add chana dal and roast till it changes colour slightly and then add cumin seeds,  ginger, green chilli, curry leaves, asafoetida powder and roast for 10-15 seconds.

3. Next add rava, stir and roast for about 2-3minutes or till the rava starts to give nice aroma. Make sure the rava should not change its colour.

4. Switch off the flame and allow it to cool down completely.

5. Take a mixing bowl add the roasted rava, curd, grated carrot, salt, coriander leaves and give it a good mix. Next add 1/2 cup water and mix it once again and allow the batter to rest for about 30 mins.

6. After 30 mins check the batter and adjust the consistency by adding water if required as we want thick but pouring consistency batter.

7. Add fruit salt to the batter and mix gently.

8. Place the steamer by adding water to it. By the time water is getting hot grease the idli plates with oil and place the slit cashews and pour a ladle full of batter into the mould and place it in the steamer and allow it to cook for about 15 mins.

9. Allow it to cool down a bit and then de-mould the idlis with the help of a spoon and serve hot with fresh coconut chutney/red chutney/sambhar.
