Dal Makhani

Dal Makhani -  Dal Makhani is one of the  popular recipe from the Punjabi cuisine. It is made using black lentils (Whole Black Urad Dal). The name itself suggests Makhani i.e. the use of butter in this dish makes it more creamy. The Black lentils is a rich source of calcium.

A healthy & super delicious dish for lunch or dinner.

Here is the recipe to try & enjoy the delicious Dal Makhani.


Ingredients

- 1 cup whole black urad dal

- 4 tomato

- 2 onion

- 6 spoon butter/ghee

- 1/4 cup fresh cream

- 6 kashmiri red chilli

- 6 garlic cloves

- 1 inch ginger piece

- Coriander leaves

- 2 bay leaf

- 2 inch cinnamon stick

- 1 star anise

- 1 cardamom

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon coriander seeds powder

- 1 teaspoon garam masala powder


Method:

1. Wash the whole black urad dal 2-3 times thoroughly and soak the dal for 8 hours overnight.

2. Pressure cook the soaked dal by adding salt and 2 and 1/2 cup water.

(Do not close the cooker lid as soon as you add the dal, allow it to boil for 10 minutes and remove and discard the white foam that forms over the water and then close the lid and allow it to cook for about 7-8 whistles)

3. Soak the kashmiri red chilli in hot water for about 15 minutes.

(You can directly use 2 teaspoon kashmiri red chilli powder and skip this step if you don't have kashmiri red chillies)

4. Make the following preparations:

- crush garlic and ginger using a mortar pestle.

- deseed and roughly chop the tomatoes

- finely chop the onions

5. Next take a mixer jar, add the roughly chopped tomatoes, soaked kashmiri red chillies and grind it to smooth paste.

6. Take a pan, add 2 spoon butter/ghee, once the butter melts add cumin seeds, cinnamon sticks, bay leaf, cardamom, crushed ginger- garlic and saute it for about a minute.

7. Next add chopped onions and cook for 5-6 minutes.

8. Now add the tomato-red chilli puree, turmeric powder, coriander seeds powder, mix and cook for about 5 minutes.

9. At this stage add the cooked whole black urad dal, 4 spoon butter, garam masala and give it a good mix and cook till all the ingredients gets combined well. It takes about 8-10 minutes approximately.

10. Now add coriander leaves & 1/4 cup fresh cream & stir & cook for about 5 more minutes and here your delicious Dal Makhani is ready to be served.
