Pav Bhaji

Pav Bhaji - An authentic dish that every one, right from children to elders, love having Pav Bhaji.When we plan of an Indian party or any gathering, the fast food that pops up in our mind & tops the menu list is always Pav Bhaji.

Ingredients:

For masala
- 4 spoon coriander seeds
- 2 spoon cumin seeds
- 1 spoon fennel seeds
- 2 cardamon
- 1 spoon pepper corns
- 10 clove
- 2 bay leaf
- 2 inch cinnamon stick
- 10 dried red chilli
- 1 spoon turmeric powder
- 1 spoon dry mango powder/ rock salt

For Bhaji:
- 4 tomato
- 2 onion
- 1 capsicum
- 1 boiled potato
- 1/4 cup boiled green peas
- 4 garlic clove
- 1 inch ginger piece
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon aamchur (dry mango) powder
- 1/2 teaspoon kashmiri red chilli powder
- 4 spoon butter
- a handful of coriander leaves

Method:

Steps to prepare fresh homemade pav bhaji masala at home -
(You can skip this step if you want to and directly add 2 teaspoon of store bought pav bhaji masala powder instead)

1. Take a pan, add coriander seeds, cumin seeds, cardamom, pepper corns, clove, fennel seeds, bay leaf, cinnamon stick, red chilli and dry roast all the ingredients for about 5 mins on medium flame. Once done tranfer the ingredients to a mixer jar allow it to cool down completely and then grind it into a fine powder and keep it aside.

Steps to make pav bhaji -

1. Finely chop the vegetables (Onions, tomatoes, capasicum) and keep them aside. Next crush the ginger, garlic using a mortar and pestle.

2. Take a pan & add 2 spoon butter, once the butter melts add 1/2 teaspoon cumin seed, crushed ginger garlic and saute it for a minute.

3. Next add the chopped onions and saute it for about 3-4 mins till it becomes transparent.

4. At this stage add the chopped tomatoes, capsicum, boiled green peas, boiled potato and saute it for about a minute.

5. Next add required amount of salt and mix the vegetables by adding one cup of water. Cover and cook for about 5 mins.

6. Open the lid and mash all the vegetables using a vegetable masher and then add 2 spoon of the pav bhaji dry masala powder that you have prepared earlier and add more water if required to adjust the consistency. Cover and cook for about 5 more mins.

7. Add more 2-3 spoon butter on top and give it a good mix and finally switch off the flame and garnish it with coriander leaves.

Serve it hot with butter toasted Pav or Chappati along with raw onions,a piece of lemon & papad.
