Restaurant style Veg. Kolhapuri Sabzi

Restaurant Style veg. Kolhapuri Sabji - A very famous & popular sabji preferred in most of the visit to hotels for lunch or dinner.

This sabji can be made at home too & without compromising its delicious taste.


Ingredients
- 1 large potato (cut it into small cubes)
- 1/2 cup roughly chopped beans
- 1 cup cauliflower pieces
- 1/2 cup green peas
- 1 carrot (cut it into small cubes)
- 1/2 cup paneer pieces
- 2 tomato
- 2 onion
- 2 dried red chilli
- 10 cashew nuts
- 1 spoon poppy seeds
- 2 bay leaf
- 1 star anise
- 2 clove
- 2 pepper clove
- 1 cardamom
- 2 inch cinnamon stick
- 1 teaspoon kashmiri red chilli powder
- 1 teaspoon coriander seed powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- butter/ghee
- salt
- 1/2 cup chopped coriander leaves.

The ingredients list is quite big but all the ingredients are in season.


Method -

1. Roughly chop the onions and tomatoes. Soak cashew nuts and poppy seed for about an hour.


2. Take a pan add one spoon oil, when the oil is hot add onions and saute it till it becomes slightly brown in colour and then add tomatoes, red chilli, garlic cloves and cook till the tomatoes becomes mushy. Once cooked, allow the mixture to cool down completely.


3. Take a mixer jar add the cooked onion tomato mixture, soaked cashew nuts, poppy seeds and grind it into a smooth paste and keep it aside.


4. Take another pan, add some butter/ghee, once the butter melts, add mustard seeds, cumin seeds, bay leaf, star anise, clove, pepper, cardamom, cinnamon stick and saute it for about a minute.


5. Next add the vegetables (potato, beans, cauliflower, green peas, carrot), sprinkle some salt and saute it and cook for about 5-6mins.


6. Next add all the spices (turmeric powder, kashmiri red chilli powder, coriander seeds powder, garam masala powder) and give it a good mix and cook for more 15mins by adding half cup water.


7. Once the vegetables are cooked add the onion tomato puree, paneer cubes and cook for about more 10-12mins.


8. Take a tadka pan add one spoon butter/ghee, add 1 red chilli and pour the tempering over the veg. kolhapuri and garnish it with some coriander leaves.


Your favourite Kolhapuri sabji is ready to serve with Chapati,Naan,Rumali Roti & Fried Rice.
