Brinjal Rice

Brinjal Rice - A high-fibre, low calorie, minerals and carbs enriched simple recipe. 
(If you are allergic to brinjal please avoid this recipe)

Ingredients - 
1 cup raw rice 
6 medium sized brinjal
3 tomatoes
4 dry red chillies
A bunch of curry leaves
2 spoon chana dal
1 spoon urad dal
1 spoon toor dal
Cumin seeds (jeera)
Coriander seeds
1/2 spoon turmeric powder
2 clove
2 cardamom pods
2 inch cinnamon stick
1 bay leaf
1 star anise
Salt
Sesame oil/sunflower oil

Method -
1. Wash and cook the rice and keep it aside. 
(The rice must cool down completely and it should not be sticky and see to it that each and every grain is separate)

2. Now take a pan and dry roast chana dal, urad dal, toor dal, cinnamon stick, star anise, grated coconut, cardamom pods, clove and bay leaf. (Roast all the ingredients till you get a good aroma for 6-7mins on medium flame)

3. Now transfer the ingredients into a mixer jar and grind it into a fine powder and keep it aside.

4. Slice the brinjals vertically and chop the tomatoes very finely.

5. Take another pan and add 2 spoon  sesame oil, once the oil is hot add the sliced brinjals and saute it for 5-6mins by adding little pinch of salt.

6. Transfer the sauteed brinjals to a separate plate.

7. Now add 4 spoons of sesame oil in the same pan and add mustard seeds, cumin seeds and curry leaves and let the mustard seeds splutter.

8. Now add tomato and turmeric powder and saute it till it becomes soft.

9. Now add the grounded masala that you have prepared earlier, sauteed brinjal and salt and mix it and switch off the flame.

10. Now add the cooked rice to the mixture and mix well.

Note: you can serve Brinjal rice for lunch with potato chips, papad or curd.
