(Stuffed Bitter Gourd with Nutty Masala)
A traditional Maharashtrian-style stuffed karela recipe that balances the bitterness of karela with the nutty, tangy, and slightly sweet masala, making karela irresistible even for those who usually shy away from its bitterness.
Ingredients
Bitter gourd – 4 medium-sized
White sesame seeds – 1 spoon
Groundnuts – 1 spoon
Onion – 1 medium, finely chopped
Green chillies – 3
Dry red chillies – 4
Ginger – 1-inch piece
Garlic – 4 cloves
Fresh grated coconut – 1/4 cup
A handful of fresh coriander leaves
Jaggery powder – 1 spoon
Dry mango powder – 1 tsp
gram flour– 1 spoon
Oil – 3–4 tbsp
Salt (as per requirement)
Method
Prep the karela
Wash the karelas thoroughly.
Add them to a pot of water with 1 tsp salt. Boil until soft.
Strain and let them cool.
Prepare the masala
Heat 1 tbsp oil in a pan.
Add sesame seeds, groundnuts, onion, green chillies, red chillies, ginger, garlic, coconut, coriander leaves nd salt.
Sauté until fragrant and lightly golden.
Add jaggery and aamchur powder Mix well.
Finally, stir in besan to bind the masala.
Stuff the karela
Slit each karela lengthwise without cutting into halves.
Remove seeds and pulp carefully.
Fill each karela with the prepared masala paste.
Roast the karela
Heat 3–4 tbsp oil on a tawa.
Place the stuffed karelas and roast on medium flame until slightly brown on all sides.
Serve hot
