Coconut Milk Pomegranate Juice – A Refreshing Twist!

Ingredients
- ½ fresh coconut (white pulp only)
- 1 ripe pomegranate
- 2–3 teaspoons jaggery powder (adjust to taste)
- 2 cups water (for extraction)
Method
Step 1: Extract Coconut Milk
- Chop the coconut pulp into small pieces.
- Add 1 cup water and grind until smooth.
- Strain the mixture using a fine mesh strainer, muslin cloth, or nut milk bag to extract the milk.
- Repeat the process once more with the same pulp and another cup of water to get a second extraction.
- Combine both extracts and set the coconut milk aside.
Step 2: Prepare Pomegranate Juice
- Add the pomegranate seeds to a mixer jar with 1 cup water.
- Blend well and strain to extract the juice, discarding the pulp.
Step 3: Mix and Sweeten
- In a bowl or jug, combine the coconut milk and pomegranate juice.
- Add jaggery powder and stir until fully dissolved.
Step 4: Chill and Serve
- Refrigerate for 2–3 hours for a chilled version.
- Pour into glasses, garnish with a few pomegranate pearls if desired, and enjoy!
Tips & Variations
For a thicker texture, reduce the water slightly during coconut milk extraction.
