Carrot Thogayal – A Nutritious and Flavorful South Indian Delight
Carrot Thogayal (or Thuvaiyal) is a thick and coarse chutney packed with the goodness of carrots, lentils, spices, and coconut. Ingredients
- 3 medium-sized carrots (peeled and chopped)
- 2 tbsp chana dal
- 1 tbsp roasted peanuts
- ½ tsp fenugreek seeds

- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 4 dried red chilies
- 2 garlic cloves
- ½ tsp asafoetida powder
- A handful of coriander stems
- ½ cup fresh grated coconut
- Salt to taste
- 2 tbsp sesame oil
Method:
1. In a pan, add chopped carrots along with ½ cup of water. Let them cook until they turn soft. Set aside.
2. In another pan, dry roast chana dal and garlic for about 3-4 minutes. Then add cumin seeds, black pepper, fenugreek seeds, coriander stems, and dried red chilies. Roast for another minute until fragrant.
3. Let the roasted ingredients cool slightly, then grind them with roasted peanuts, asafoetida, salt, and grated coconut into a coarse powder.
4. Add the softened carrots to the mix and grind again with ¼ cup water, forming a thick, coarse paste.
5. Transfer the thogayal into a bowl, drizzle sesame oil over it, and mix well.
6. Serve this delicious Carrot Thogayal with steamed rice, idli, dosa, or chapati.
