Paal Payasam

Paal Payasam - In southern parts of India, kheer is called Payasam. It is one of the traditional dish made & served as prasad on almost every special occasions. Payasam is made in many variations. This Pal Payasam is mainly made using rice, mishri & milk. Ingredients : - 1/4th cup rice - 1 and 1/2 litre milk - 1 and 1/4th cup rock candy sugar - dryfruits (10-15 almonds, cashews, pistachios each and handful of raisins) Method: 1. Soak all the dryfruits 4-5 hours in water. 2. Wash and soak the rice for 15-20 minutes. 3. Take a heavy bottom pan, heat it on a medium flame.  4. Once the milk starts to boil add the soaked rice and mix it gently. 5. Do stir the milk regularly when it is boiling in order to prevent the milk from sticking at the bottom of the pan. 6. Continue to simmer the milk by stirring it regularly till the rice is cooked completely. 7. You can also mash the rice a little bit. 8. Moong Appe - whole Green Moong is rich in nutrients & antioxidant in nature. Having sprouts gives immense health benefits. We all love to enjoy our evening tea with some new snacks. Here is one such healthy recipe to enjoy with your tea. Ingredients: - 1 cup whole green moong dal - 1/2 cup Sago seeds (Sabudhana) - 1 medium sized onion - 1 green chilli - a bunch of curry leaves - 1/2 inch ginger piece (grated) - salt - a handful of coriander leaves (finely chopped) - 1 spoon Eno (fruit salt) Method : 1. Wash and soak Moong dal and sago seeds for 6-7 hours. 2.  Grind soaked sago seeds and moong dal into a fine paste and transfer it to a bowl. The consistency of the batter should be thick like that of Idli batter. (Grind the sago seeds first and then moong dal by adding very less amount of water) 3. Lauki/Bottle gourd Halwa with Jaggery - A sweet healthy guilt-free treat. Eating bottle gourd provides a cooling effect on the body & has immense health benefits. Halwas are all time favourites of everyone. This recipe is made with jaggery with is much healthier. Ingredients :  - 2 lauki/bottle gourd - 1 and half cup powdered jaggery - 1/2 litre milk - 4-5 spoon ghee - chopped dry fruits: 10 almonds, 10 cashews, 10 postachios. - a handful of raisins - 1/2 teaspoon cardamom powder. Method : - Rinse, peel and grate the lauki. - Take a heavy bottom pan, add 2 spoon ghee, once the ghee is hot add grated lauki and saute it for about 10-12 minutes on medium flame. - Next add milk and give the mixture a good mix. - Continue to cook on medium flame and keep stirring it in regular intervals. - You will find that the milk is absorbed fully. Basundi

Basundi - Basundi is a traditional sweet recipe made by simmering the milk till it reduces and reaches a thicker & creamier  consistency. It is often made during festivals & functions in India. A healthy desert to relish chilled or warm. Ingredients : - 1 and 1/2 litres full fat milk - 1/4th cup powdered Mishri Sugar (also known as rock sugar/crystal sugar) - 10 almonds - 10 cashew nuts - 10 pistachios - few strands of kesar - 1/2 teaspoon cardamom powder - handful of black raisins Method : 1. Pour milk into a heavy bottom pan and start heating it on a medium flame.  2. Once the milk is warm take 2-3 spoons of milk in a bowl and soak few strands of saffron in it and keep it aside. 3. Allow the milk to boil. In between you will find layers of cream forming on top of the milk. Just break and give it a good mix using a spatula or whisk. 4. Continue to simmer and keep on stirring continuously and slowly to make sure that the milk doesn't stick to the bottom of the pan. 5. Cont
